This 2019 Puligny-Montrachet 1er Cru Les Combettes is one of the last vintages Henri Boillot made himself before his son Guillaume took over the whites in 2021. Henri's goal for his whites is easy to say and hard to pull off: straight, tense, precise, pure and elegant. That means no flab and no flash. The domaine is based in Meursault, right between Puligny and Volnay, and it has made those two villages its specialty, working toward the most precise definition of each climat. Henri arrived on the family estate in 1975, worked his way up to winemaker and started his own négociant business in 1995. Guillaume joined in 2008, took over the reds in 2012 and took on the whites as well from 2021. That makes this bottle a snapshot of the father's hand in Puligny, and anyone who follows how Burgundy domaines pass from one generation to the next will find that hard to resist.
