Henri Boillot called 2019 "truly sublime" while the harvest was still coming in. He also said yields were cut in half, so this Premier Cru Puligny-Montrachet comes from a great year with a short crop. Les Folatières is a Premier Cru climat on Puligny's slope, and Boillot describes its soils as clay and limestone. The house works out of Meursault, between the two villages it specializes in, Puligny and Volnay, and its stated mission is to define each climat as precisely as possible. These days Henri concentrates on the whites (his son Guillaume runs the vineyards and makes the reds), and he wants them straight, taut, precise, pure and elegant. That approach lets the site do the talking instead of the cellar. This is serious white Burgundy, best opened for a proper dinner and given a little air.

"A whiff of the exotic sits atop the riper aromas of white and yellow peach, dried apricot and passion fruit. There is a lovely texture to the rich and caressing but quite punchy flavors that conclude in a youthfully austere and beautifully persistent finale where a touch of bitter lemon zest slowly emerges. Good stuff and very Folatières in character."

"Produced from purchased grapes—as opposed to must—the 2019 Puligny-Montrachet 1er Cru Les Folatières bursts with aromas of pear, peach, white flowers, toast and honeycomb. Medium to full-bodied, satiny and enveloping, it's fleshy and gourmand, with lively acids and a chalky finish." —William Kelley

More about Henri Boillot

Fifth generation on his family's Burgundy estate—Henri Boillot is a 'star winemaker' whose white wines rank among Burgundy's most extensive and remarkable. Based in Meursault with 19 hectares spread across the Côte de Beaune's finest appellations, he crafts whites that are straightforward, taut, precise, pure, and elegant. His monopoly, Puligny-Montrachet Clos de la Mouchère, is his flagship.

Tasting Notes & Food Pairings

Perfect Pairings

Roast Bresse chicken with morels and cream; turbot or halibut with beurre blanc; butter-poached lobster; scallops seared in brown butter; aged Comté.

Tasting Profile

Expect the classic Puligny-Montrachet Premier Cru profile: white flowers, lemon, white peach and hazelnut over a stony, limestone-driven minerality. In Henri Boillot's taut, precise style, the palate is medium- to full-bodied yet tightly focused, with bright, cutting acidity and a long, saline, dry finish. Think of it as a more chiselled, mineral take on Meursault's richness.
