Village Chassagne-Montrachet made with the patience most growers save for their premier crus. Olivier Lamy, who runs the domaine today with his wife Karine, makes it from Le Concis du Champs. It's a 0.93-hectare parcel low on the slope southeast of Chassagne village, facing east-southeast on heavy clay. Lamy planted it in 2005, so these vines were still under ten years old when the 2014 was picked. The farming is organic and hands-on: Guyot Poussard pruning, de-budding by hand, and high or braided canopies. In the cellar, the house approach is ambient-yeast fermentation and about two years on the lees in mostly used 300- and 600-litre barrels, followed by roughly six more months in tank. Sulfur goes in only during ageing. Olivier joined in 1995, coming into a domaine Hubert had founded in 1973 with about 8 hectares of mostly regional vineyards (the Lamys have farmed vines since 1640). This is serious, carefully made Chassagne at village level, which makes it a smart way into one of white Burgundy's most closely followed names.

More about Hubert Lamy

Olivier Lamy took over this Saint-Aubin estate in the 1990s and transformed it from solid to legendary. Nineteen hectares of Côte de Beaune terroir (two-thirds Chardonnay) worked with obsessive attention and lutte raisonnée. His Haute Densité cuvées, from vines planted at unusually high density, show what happens when you farm like you mean it. Concentrated, complex, Saint-Aubin's new standard.

Tasting Notes & Food Pairings

Perfect Pairings

Roast chicken with tarragon and crème fraîche; sole meunière with brown butter and capers; warm Comté gougères; chanterelle and shallot risotto; seared scallops with beurre blanc.

Tasting Profile

Expect classic village Chassagne-Montrachet: lemon, white peach and hazelnut over a chalky, salty core. Long ageing on the lees in large, mostly used barrels typically gives a textured, medium body with only subtle oak, and the heavy clay adds a little breadth. Bright acidity carries a long, focused, dry finish.
