The Aligoté that converts skeptics. Jean-Philippe Fichet, the Meursault grower who built his estate parcel by parcel over nearly four decades, treats his Bourgogne Aligoté with the same attention he gives his Meursault lieux-dits — winter pruning instead of green harvesting, long élevage on lees with restraint, almost no new oak. Fruit comes largely from vines around Meursault. The wine that arrives is among the most energetic Aligotés in the Côte d'Or: green apple, lime zest, crushed chalk, a saline-mineral cut that makes you understand why this grape, long dismissed as the village ringer, has become one of Burgundy's quiet revivals. Drink cold, with food, and don't be surprised when the bottle empties faster than expected.
