Oeil de perdrix, "eye of the partridge," is the old name for the pale coppery-pink you get when Pinot Noir is bled just barely into color, and Jean Vesselle's version is a delicious lesson in what that can be. This is true grower Champagne (recoltant-manipulant): the Vesselle family has farmed the chalky slopes of grand cru Bouzy for nearly 300 years, and today Delphine Vesselle makes the wines from estate Pinot Noir. It's 100% Pinot, given a brief skin maceration for color, fermented on native yeasts and aged around three years in bottle, with a low 6 g/l dosage. The result marries classic Champagne finesse with Bouzy's signature power. A serious blanc de noirs that happens to be pretty in the glass.
