A Junmai Daiginjo built for restraint rather than fireworks: where most sake polished this far chases big floral aromatics, this one is deliberately quiet, and that's the point. It's brewed at the Higashiyama brewery in Kyoto with the soft, pure Fushimi water that has long made Kyoto sake rounder and gentler than the sharper styles from harder-water regions. The rice is Yamada Nishiki — the benchmark sake variety — grown by the well-regarded farmer Masayasu Tanaka and milled down to 50%, with no distilled alcohol added. Konteki means "dew drops of the earth," and the house frames the whole thing around wabi-sabi: beauty that should be as understated as a plain strand of pearls. Serve it well chilled, in a wine glass rather than a thimble.

More about Konteki

Konteki is sake built on restraint. Where many premium sakes chase big, perfumed aromatics, these are deliberately quiet, shaped by the Zen ideal of wabi-sabi: beauty that is understated and pure, like a plain strand of pearls.

The name means "dew drops of the earth." It comes from the Higashiyama brewery in Fushimi, the Kyoto district long famous for its sake and for the spring water that brewers there draw on. The rice is Yamada Nishiki, the benchmark sake variety, grown by farmer Masayasu Tanaka in Tottori Prefecture.

The range is a neat lesson in sake grades. Pearls of Simplicity and Tears of Dawn are brewed the same way from the same ingredients, with the rice polished to 50%. Pearls is a Junmai Daiginjo, pure rice and nothing else. Tears of Dawn is a Daiginjo, with a touch of distilled alcohol added to lift the aromatics and lighten the body. Tasting them side by side shows exactly what that traditional technique does. Serve both well chilled, in a wine glass.
