A Junmai Daiginjo built for restraint rather than fireworks: where most sake polished this far chases big floral aromatics, this one is deliberately quiet, and that's the point. It's brewed at the Higashiyama brewery in Kyoto with the soft, pure Fushimi water that has long made Kyoto sake rounder and gentler than the sharper styles from harder-water regions. The rice is Yamada Nishiki — the benchmark sake variety — grown by the well-regarded farmer Masayasu Tanaka and milled down to 50%, with no distilled alcohol added. Konteki means "dew drops of the earth," and the house frames the whole thing around wabi-sabi: beauty that should be as understated as a plain strand of pearls. Serve it well chilled, in a wine glass rather than a thimble.
