Les Pouches is dry Chenin Blanc from one of Saumur's most exciting young addresses, made by Sylvain Dittiere, who apprenticed with Loire and Roussillon greats like Thierry Germain and Gerard Gauby before founding his organically certified domaine in 2010. The fruit comes from roughly 40-year-old vines on a chalky limestone ridge, fermented with native yeasts and aged 18 months in barrel, a good portion new, with no fining or filtration. That gives a powerful, mineral-driven Chenin with real depth and texture, the kind of serious dry white the Saumur appellation does so well. Production is tiny. Decant it or give it air; this one rewards attention.
