A Champagne built for the dinner table, not just the toast. Les Rouges Maisons is Laherte Freres' Pinot Noir blanc de noirs, a white wine pressed from black grapes and finished Extra Brut, with the dosage kept low enough to stay out of the conversation entirely. Aurelien Laherte took over the family estate in Chavot in 2005 and has spent two decades turning a grower's house into one of the most restless, parcel-driven names in the region. This is the savory, red-fruited side of Champagne: dried cherry and kirsch, dried flowers, a little marzipan and spice, with real texture sitting underneath the bubbles. Built on the 2021 base. Pull the cork at dinner and watch it behave like a wine, which is exactly the point.

"The NV (2021) Extra Brut Blanc de Noirs Les Rouges Maisons is terrific, especially for this vintage. Dried cherry, kirsch, dried flowers, marzipan and spice fill out the layers effortlessly. There's gorgeous presence and textural resonance, not to mention considerable dimension to round things out. This is impressive. Dosage is 2.5 grams per liter.
