Verzare is the tense one, the parcel where Laura De Vito's Fiano turns lean and stony rather than broad. It sits at around 500 meters in Lapio, the heart of the Fiano di Avellino DOCG, on limestone-rich soil that shows up in the glass as a chalky, high-toned cut. De Vito founded her estate in 2018 with an unusually disciplined idea: work only with Fiano, bottle each of her parcels separately, and treat them all identically so that the differences you taste come from the sites. Vinification is deliberately plain, destemmed and lightly pressed, fermented in stainless steel, nine months on fine lees, no oak, then a long rest in bottle before release. Serve it cool rather than cold and don't rush it; Fiano of this cut opens up over an hour and rewards a few years in the cellar.

"The Laura De Vito 2022 Fiano di Avellino Vezare is an expressive wine with aromas of charcuterie, stone fruit and honey. On the enveloping, polished palate, tangy acidity accompanies apricot, yellow apple and bitter almond before a salty finish. Drink through 2030." —Kerin O'Keefe

More about Laura De Vito

Laura De Vito makes nothing but Fiano, all of it from Lapio, the village many consider the grape's finest home in Irpinia, and she bottles her vineyards separately so you can taste exactly what each one brings.

De Vito grew up with the grape: her father made Fiano, and her mother's family made Aglianico. She founded her own estate in Lapio in 2018 with her husband, Carmine De Maria, working with vines planted in the mid-1990s at roughly 500 to 600 meters, where cool nights and steady breezes keep the grapes healthy and the acidity intact.

The method is deliberately simple and identical for every wine, so that the site does the talking: low yields, a gentle pressing, fermentation in stainless steel, about nine months on the fine lees and a long rest in bottle before release, with no oak. Elle blends three contrade, and the single-vineyard wines show their differences clearly: Verzare, on limestone-rich soil, is lean and stony; Arianiello mixes limestone with volcanic ash and sand; and Li Sauruni comes from the highest site, on limestone-rich soil. Expect transparent, mineral Fiano that rewards a few years in the cellar.
