Verzare is the tense one, the parcel where Laura De Vito's Fiano turns lean and stony rather than broad. It sits at around 500 meters in Lapio, the heart of the Fiano di Avellino DOCG, on limestone-rich soil that shows up in the glass as a chalky, high-toned cut. De Vito founded her estate in 2018 with an unusually disciplined idea: work only with Fiano, bottle each of her parcels separately, and treat them all identically so that the differences you taste come from the sites. Vinification is deliberately plain, destemmed and lightly pressed, fermented in stainless steel, nine months on fine lees, no oak, then a long rest in bottle before release. Serve it cool rather than cold and don't rush it; Fiano of this cut opens up over an hour and rewards a few years in the cellar.
