Sébastien Mouzon represents the ninth generation at this family estate in Verzy, one of Champagne's seventeen Grand Cru villages. Since taking over in 2008, he has converted all 8.5 hectares to biodynamic farming (Demeter certified) and pioneered vitiforestry, planting over 1,300 trees among his vines. L'Incandescent is a true rosé de saignée—100% Pinot Noir macerated for 16 hours to extract color and aromatic compounds from the skins, a method far rarer than blending. The wine ages roughly 30 months on lees before release with minimal dosage (1 g/L). Verzy's distinctive flint-rich soils—once the site of a flint quarry—impart remarkable minerality that shows before the fruit. The result is wild and herbal, with red berry character and firm structure. A Champagne for those who want to taste the earth beneath the bubbles.

"The NV Extra Brut Rosé de Saignée L'Incandescent is a very pretty wine that melds together striking perfume with the taut feel that runs through all these Champagnes. Crushed red berry, chalk, slate and white pepper lend brilliance. I wish there was a bit more on the mid palate. This release is 100% Pinot Noir that saw 25 hours on the skins, all 2015, aged mostly in oak. Dosage is 2.5 grams per liter." —Antonio Galloni

"Disgorged in February 2021 with 1.5 grams per liter dosage, the NV Rosé de Saignée L’Incandescent is derived from the 2017 vintage and saw a 22-hour maceration. Mingling aromas of red berries and plums with notions of orange rind, exotic spices and forest floor, it's medium to full-bodied, vinous and sapid, with a pretty core of spicy fruit, lively acids and a savory finish. There's a certain fragility to the wine that leads me to suspect it will be at its best young." —William Kelley
