Soverribas showcases what three specific parcels—Manzaniña in Meaño, Ixertal and Casal in Ribadumia—can achieve when unified under a single cuvée concept. Vines range from 35-100 years old on largely west-facing slopes with sandy granitic soils and clay deposits. Hand-harvested, sorted fruit undergoes gentle pressing without destemming in a whole-bunch pneumatic approach. The wine then rests in a 2200-liter used French oak barrel for nine months on lees with weekly batonnage (first month only). The result is a "powerful, saturating style of Albariño founded on fresh citrus and orchard fruits with salty, long finish." This is Rías Baixas wine at its most ambitious—a cuvée that channels the intensity these ancient vines and prime sites can achieve.
