Neta, Mezcal Espadin Capon (Simitrio Aquino Garcia)

Capon is agave delayed gratification: cut the flower stalk before it blooms and the plant, denied its one shot at reproduction, pours all that energy back into the pina instead. Leave it in the ground another year or two and the sugars concentrate into something far deeper than standard espadin. Simitrio Aquino Garcia made this one in Miahuatlan, in the southern hills of Oaxaca, for Neta, a project whose name is Mexican slang for the real deal and which puts the mezcalero's name on the label instead of a marketing one. It is made the long way: pit-roasted over wood and hot rocks, crushed, fermented with ambient yeast, then twice distilled in small stills. Nothing about it is hurried, and nothing about it needs a mixer. Pour it at room temperature in a copita and take your time.

More about Neta

NETA bottles tiny, single-family batches of agave spirit from Miahuatlán, the southernmost of Oaxaca's central valleys, and names the maker on every label. It is about as close as mezcal gets to grower Champagne.

Max Rosenstock spent years from around 2012 getting to know small producers around the village of Logoche; Niki Nakazawa joined him as CEO, and NETA launched in 2019. Each release is a single batch of a few hundred liters at most. NETA labels them destilado de agave, staying outside the official mezcal certification, but the methods are fully traditional: earthen pit ovens, wooden fermentation tanks, small copper pot stills.

Many bottlings are capón, from agaves whose flowering stalk was cut and left to ripen for months, concentrating sugar in the heart. Expect intense, layered spirits that change from family to family. Sip them neat.

Tasting Notes & Food Pairings

Perfect Pairings

Best on its own in a copita, but it stands up to salty, fatty snacks: aged cheese, chile-roasted peanuts, orange slices with sal de gusano. A serious after-dinner pour.

Tasting Profile

Dry and light-bodied, with roasted agave sweetness, wood smoke, green herbs and a clean, faintly citric, mineral finish.
