Niepoort believes a Ruby Port should actually look like a ruby — translucent red rather than the opaque black of so many commercial bottlings — and this is the bottle that makes the argument. The grapes come from low-yielding Cima Corgo vineyards on schist, vines over thirty years old, hand-picked into small crates and then foot-trodden in granite lagares for four hours a day through harvest, the old labor-intensive method that extracts color and tannin gently. Fermentation is arrested with grape spirit about halfway through, leaving the wine sweet and fortified, and it then rests three years in large old oak casks in Vila Nova de Gaia — large vessels that keep the wine bright and fruity instead of letting it turn nutty. Unlike a Tawny, a Ruby is meant to be drunk young, while the fruit is still ringing. A light chill does it no harm at all.
