Aligoté from Puisaye-Forterre—between Sancerre and Chablis in northernmost Burgundy. Raphaëlle Guyot returned here in 2018 after her BTS in viticulture and oenology from Beaune (2015) and apprenticeships at Thibault Liger-Belair, La Grange Tiphaine, and Vincent Pinard. She farms about 3 hectares, replanting vineyards that held vines in the 19th century before phylloxera. Direct-pressed, fermented and aged 10 months in concrete. Organic and biodynamic practices (not certified). Minimal sulfur, hand-harvested.

One of France's most exciting young winemakers, returned to her native Yonne in her late 20s to establish her domaine between Burgundy and Sancerre. She inherited overgrown parcels and painstakingly brought them back to life. Her Pinot Noirs have real soul—intrepid winemaking.
