This is Riesling Spätlese from a single cask. At Hofgut Falkenstein the AP number on the label identifies the individual Fuder the wine was made in, and Erich and Johannes Weber like to bottle each cask on its own, so you can taste one cask against another from the same hillside. AP #6, "Klaus," comes from the Krettnacher Euchariusberg, a steep slate slope in the Saar, the Mosel tributary where Riesling is at its most taut. Erich bought his piece of it in 1979. His neighbours preferred the flatter valley floor that machine harvesters could reach, so steep slopes were easy to buy, and that turned out to be a very good deal. The Webers make their Euchariusberg Spätlese with native-yeast fermentation and age it in old-fashioned oak Fuder. They also still label their wines with the traditional Prädikat names, which most producers have dropped. For years you could only buy these wines straight from the estate, so a single-cask bottling like this is a real chance to see how closely this family works.

More about Hofgut Falkenstein

The Webers bought this Saar estate in 1981 and decided to do everything in barrel—fermentation, elevage, everything. No tanks at all. Each Fuder gets bottled separately, a restoration of old-time practice that lets you taste the micro-variations between casks from the same site. Minimal intervention since 2021-certified organic; this is Mosel winemaking as philosophy.

Tasting Notes & Food Pairings

Perfect Pairings

Thai larb or green papaya salad, Sichuan dan dan noodles, glazed pork belly, smoked trout with horseradish cream, baked ham with mustard.

Tasting Profile

Expect the classic Saar Spätlese profile: green apple, white peach and lime, with a smoky, stony note from the slate. The palate is typically light-bodied and gently sweet, with the Saar's racy, high-toned acidity keeping the sweetness in check. Old oak casks add texture rather than oaky flavour, and the finish runs long, juicy and mineral.

WINE GUIDES

German Wines

Is there a better grape than Riesling? Is there a better value? Its fruit purity, its perfume, and its mineral nuance are all unparalleled. And for centuries, the top German Rieslings were priced accordingly: at least as expensive as the top red wines of Bordeaux and Burgundy. But nowadays you could spend a lifetime exploring Germany’s great Riesling-producing regions while staying well within your budget. You might take an occasional break to try Germany’s other white grapes or perhaps a glass of Spätburgunder (the local name for Pinot Noir). It’s time to get started!
