If you've been trying to find a way into Thierry Allemand, the hardest single name to buy in the Northern Rhône, the "C" is your best bet. The C stands for Chaillot. Allemand shortened his labels, but the wine hasn't changed: it comes from the domaine's younger vines on a classic Cornas slope of mostly granite facing east and southeast, with a streak of limestone through its lower section. (It isn't strictly a single-vineyard wine. Allemand sometimes moves his oldest Chaillot vines into Reynard, and the mix changes from year to year.) Everything else is pure Allemand: Syrah and nothing but Syrah, from steep terraces farmed organically and entirely by hand with no tractor. In the cellar the stems stay on, punch-downs are done by foot, and he uses as little sulfur as he can, sometimes none at all. He learned his craft from Robert Michel, who once saved his life when he fell into a cask of wine. In Cornas, 2023 produced dense, structured wines, and we think Allemand's 2023s are spectacular. If you see a bottle, grab it.

"Notes of mulberries, violet and blueberry mingled with subtle carnal nuances preface the 2023 Cornas Les Chaillots, a medium- to full-bodied, dense and structured wine with a tensile, vibrant profile framed by velvety tannins, concluding with a long, ethereal, violet-inflected finish. Produced at a yield of 32 hectoliters per hectare—a healthy figure for the estate—it will require patience in the cellar." —Yohan Castaing

More about Thierry Allemand

Thierry Allemand didn't just revive Cornas—he redefined it. Learning under Joseph Michel and Noël Verset in the early 1980s, he proved that this austere appellation could produce balanced, elegant, age-worthy reds without heavy tannin and new oak as crutches. Only 500 cases each of Chaillot and Reynard, five hectares total, organic farming, minimal sulfur: Allemand is one of the closest things the Northern Rhône has to a cult figure, and he earned it.

What Kermit Lynch Wine Merchant has to say about this wine:

Tasting Notes & Food Pairings

Perfect Pairings

Rosemary-grilled lamb chops, seared duck breast with a peppercorn sauce, braised short ribs, or venison with juniper and roasted wild mushrooms.

Tasting Profile

Expect the classic Cornas profile, lifted by whole-cluster fermentation: blackberry and black cherry, cracked pepper, violets, black olive and a smoky, granite-driven edge. Typically medium- to full-bodied, with firm but fine tannins and fresh acidity, finishing dry, savoury and long. Think of it as a wilder, more rustic cousin of Côte-Rôtie.
