Tim Smith spent over a decade at Yalumba before launching his own tiny Barossa label in 2001, and his rosé has quietly become one of the most reliable bottles to come out of South Australia. Built on Mataro — Mourvèdre to most of the world, but a deep-bench Barossa specialty — sourced from old-vine growers Tim has worked with for years. The fruit is picked early to keep things lean and dry, and the result is a Barossa rosé that tastes more Mediterranean than tropical: ripe but not heavy, with crunchy red fruit, fennel, and a savory finish. Built for a hot afternoon, a long lunch, and the kind of grilling that runs into sundown.
