A Provençal rosé made by the families behind Domaine de la Romanée-Conti and Domaine Dujac, which is exactly as improbable as it sounds. Aubert de Villaine and Jacques Seysses went looking for a project in the South of France in the 1980s and settled on an estate at Nans-les-Pins in the Var, drawn by clay-limestone soils that in places reminded them of Burgundy and by 380 meters of elevation, which means cool nights and preserved acidity. They converted the vineyards to organic farming - they're certified - planted cover crops between the rows to build up the topsoil, and cut yields. The rosé is Cinsault-led with Grenache, Syrah and Merlot, harvested at night, gently pressed, fermented cool in stainless steel and rested on its fine lees. It comes out pale, dry and precise rather than sweetly fruity, and the magnum is the format it was made for - one bottle that carries a long lunch or a full table, and a larger format that will keep the wine fresh a little longer if you want it into next summer.
