Vincent Cuillier farms on the Massif de Saint-Thierry northwest of Reims, where the soils carry an unusually high proportion of sand laced with fossilised palm, a terroir that gives his Champagnes finesse rather than weight. A fifth-generation Champenois, he works his family's parcels with near-natural methods and indigenous-yeast fermentation. Heritage 1904 is his even-handed house cuvee, an almost exact three-way split of Chardonnay, Pinot Noir and Meunier, and it rests a minimum of 42 months on the lees, which is a long time for a non-vintage Brut and shows in the toasted-brioche depth. Dosage is eight grams, so this is a genuine Brut rather than a bone-dry one: rounder and more welcoming than his zero-dosage bottlings, and an easier pour for a mixed table.
