"Secreto" is one of those incredibly special wines made from vines planted over 80 years ago, and no one knows exactly what's growing in the vineyard. The blend is estimated to be about 85% Mencía, with Garnacha Tintorera, Mouratón, Gran Negro, Brancellão and Merenzão making up the remainder. It's a serious wine that could be compared to a 1er Cru in Burgundy, in terms of structure, age-worthiness, and terroir expression. But it's also deliciously alive and joyful and ready to drink right now. It's aged entirely in old French oak and comes from two distinct soil types, one sandy-granitic and the other clay-rich shale.

Adega Saíñas sits on the Cabe River in Ribeira Sacra, Spain, where Javier Fernández González started bottling wine in 1992 and his daughter Saleta and her partner Jorge took the reins after his passing. They're working about 5 hectares of sandy granitic slopes with organically farmed Mencía, bringing on winemaker Luis Seabra to help nail the balance between power and finesse. These wines taste alive—mineral, structured, made by people who actually care about the land.
