AJ Adam, Dhron Hofberg Riesling Kabinett, 2025

A Kabinett from a Mosel Grand Cru that very nearly disappeared, made by the man who almost single-handedly brought it back. As late as the 1960s, Hofberg wines sat on the great wine lists of the world. Then the slope was abandoned as too steep and too expensive to work, and parcels went for about five euros a square metre. Andreas Adam's grandparents had farmed a single hectare there. His sister Barbara (trained at Geisenheim, with a stint at Keller in Rheinhessen) joined him in 2013. The Hofberg isn't on the Mosel itself. It's a southwest-facing slope of grey slate veined with iron oxide, running about 5 km up a quiet side valley of the Dhron toward the Hunsrück forest and getting colder the further in you go. That chill means picking weeks later than the riverside sites and at lower sugar levels, which is exactly what you want for Kabinett. In the cellar the Adams add nothing (no cultured yeast, no enzymes, no süssreserve), so the gentle sweetness comes from the grapes alone. We've always said Kabinett at this tiny estate is for pure pleasure, and that's the right way to drink it.

More about AJ Adam

A. J. Adam takes us to Dhron, just off the much-beaten path of the Mosel river. Dhron is named for a river that flows into the Mosel. Its steep, slatey vineyards form the tributary's northern bank.

The sites are steeper and at higher altitude than most of Mosel. The wines are a little wispier and saltier. The fruit is cooler and whiter.

Adam is Dhron's undisputed star. He makes extraordinary dry Rieslings and Kabinetts from Hofberg, the top site in Dhron.

Tasting Notes & Food Pairings

Perfect Pairings

Thai larb or green papaya salad, Sichuan dan dan noodles, Vietnamese summer rolls with peanut sauce, smoked trout on rye, pork schnitzel with apple sauce, or a plate of prosciutto and melon.

Tasting Profile

Expect the classic Mosel Kabinett profile: green apple, white peach and lime, with a smoky, stony note from the grey slate. Typically light-bodied and low in alcohol, it's gently off-dry, with bright, crisp acidity that keeps the sweetness in check and a clean, mineral, refreshing finish.

WINE GUIDES

German Wines

Is there a better grape than Riesling? Is there a better value? Its fruit purity, its perfume, and its mineral nuance are all unparalleled. And for centuries, the top German Rieslings were priced accordingly: at least as expensive as the top red wines of Bordeaux and Burgundy. But nowadays you could spend a lifetime exploring Germany’s great Riesling-producing regions while staying well within your budget. You might take an occasional break to try Germany’s other white grapes or perhaps a glass of Spätburgunder (the local name for Pinot Noir). It’s time to get started!
