Les Champeaux sits on a rocky terrace at 340 meters beside the legendary Clos Saint-Jacques—and Alain Burguet’s expression of this mineral-rich premier cru is now over a quarter-century into its evolution. Burguet was an organic pioneer long before fashion demanded it, using only contact products and composted organic matter from the 1970s onward. For the 1999 vintage, he had just implemented his philosophy of waiting for full phenolic maturity regardless of sugar levels—a practice that gave his wines their signature voluptuous texture and velvety tannins. Fermented with native yeast, aged in barrel without added sulfur, and bottled without fining or filtration. At this age, expect the magnificent secondary complexity of great Burgundy: earth, mushroom, game, and leather emerging from a foundation of dark fruit. Decant gently 30–60 minutes before serving.
