The name is Piedmontese dialect for the red one you drink at work - this was the vermouth of the mid-shift break, not the black-tie bar. Berto's recipe dates to the 1930s and was revived by chef Federico Ricatto; it is produced at Antica Distilleria Quaglia in Castelnuovo Don Bosco, a Piedmontese house that has been in the Quaglia family since 1906. The base is wine, fortified and infused with a long list of botanicals - wormwood, gentian, bitter orange peel, rhubarb, cardamom, mint, cinnamon - and it lands sweet up front and genuinely bitter at the finish, with far more herbal snap than the supermarket bottles. Pour it over ice with an orange twist and you are done, or build it into a Negroni or an Americano, where it actually holds its own against the gin. It comes in a liter, which is the correct size for a house vermouth. Keep it in the fridge once you open it.
