One of the first certified-organic bottlings from the region, this feels featherweight and crisp, more like a coastal white wine than a fortified and long-aged one. Salicornia is Spanish and Latin name for samphire, a saline plant strongly linked to the marshes and the coast of Cadiz.

Founded in 1821 by Benigno Barbadillo, an entrepreneur from Burgos who made his fortune in Mexico, Barbadillo is the biggest Manzanilla producer and one of the biggest sherry houses overall. They own 500 hectares of vines, vinify all their own base wines, and age them in historic bodegas. Solear Manzanilla—their signature—set the template for everything that followed. Available in 50+ countries, they celebrated their 200th anniversary in 2021.

The grapes come from only two albariza soil vineyards, which have been certified organic for over 15 years.Vine age is 30yr old on average.Grapes from each vineyard are harvested by hand and fermented separately. Biological aging in a Solera started in 2020 with the first saca being bottled in September 2023.Bottled straight from the cask resulting in a fresh, vinous style of Manzanilla that’s perfect as an aperitif. Salicornia is the name of a wild, salty and gently bitter sea-bean that grows in the salt marshes off the coast of Cadiz.
