This is one of the most distinctive roses you can buy, born of desperation as much as anything. On the wind-scoured volcanic island of Lanzarote in the Canaries, vines are planted one by one in craters dug through meters of black ash, each ringed by a semicircular stone wall to fend off the wind. Yields are tiny, and the struggle shows up in the glass. Bermejos makes it from Listan Negro, the island's signature red grape, in a savory, serious style closer to a Bandol rose than anything pink and frivolous. It's all there in the 2025: strawberry and salted watermelon, blood orange and a wisp of volcanic smoke. Open it with tinned fish, radishes and butter, or Castelvetrano olives.
