Perfect Pairings

Neat, or with a splash of water to open it up; it also makes a formidable smoky highball. Pairs with oysters, smoked salmon, barbecue and grilled meats, blue cheese, and dark chocolate.

Tasting Profile

Big, young peat smoke - bonfire ash, brine and iodine - with vanilla and toasted oak from the recharred cask. Cask strength, so it is powerful and oily; a little water tames the heat and draws out sweetness. Long, smoky, salty finish.
