Pie Rupestris is Cappellano's Barolo in its purest Serralunga voice. The family calls it "severe and authoritative, austere but generous," and it comes from one of the few houses in Barolo that still refuses to play the modern game. The name tells you what it is: Nebbiolo grafted onto American Vitis rupestris rootstock, planted in the late 1940s in Serralunga's Gabutti cru. Only the heart of the holding goes into this bottle, and every bit of Nebbiolo from the lower third of the slope goes into the family's Barolo Chinato. (Don't look for "Gabutti" on the label: the family left it off in protest when the cru's boundaries were expanded.) Augusto Cappellano, the fifth generation, works the way Teobaldo did before him. That means organic farming, native yeasts, very little sulfur, long fermentations, extended aging in big old botte, and bottling without filtration. It's about as traditional as Barolo gets, and that's exactly why people hunt for it.

More about Cappellano

Serralunga is extreme. No village in Barolo produces wines of greater structure and longevity. We understand that has to do with its soils, as no village in Barolo has a greater concentration of limestone.

When dealing with such a lion of a terroir, it must be tempting to find a whip that will tame the beast. For a wine-maker, that could be barriques, or short macerations, or roto-fermentors. Those are the short-cuts.

Augusto Cappellano, like his father Teobaldo before him, does not take those short cuts. Partly, that's because he is just fine with structure and longevity. That is the natural product of Serralunga's special terroir, after all. Partly, it's because Augusto's extremely high-quality farming (the family has only four hectares so they can apply their natural farming methods assiduously to each and every vine) ensures that the grapes' tannins ripen properly, avoiding any of the harsh, bitter qualities that for years many assumed were also "natural."

Tasting Profile

Expect traditional Serralunga Barolo at its most classical: liquorice, tar, juniper and balsamic notes over dark cherry, with spice and undergrowth. Aged in large old botte rather than new oak, it's typically full-bodied yet austere, with firm, grippy tannins, high acidity and a long, savoury finish built for cellaring.
