A Mallorcan natural wine by the grower who, as far as anyone knows, bottles the world's only varietal Escursac. Cambuix is Mallorquin for "bedhead." Cati Ribot first made it in 2020, when a severe storm hit near the end of harvest and left vines strewn and branches broken. A friend took one look at the vineyard and thought of someone who'd just rolled out of bed. The fruit comes from Cati's Son Llebre vineyard on Cal Vermell, the island's iron-rich clay-calcareous soil, in Santa Margalida in northeast Mallorca. She farms it organically and biodynamically, and a flock of rare red-skinned Mallorquin sheep grazes the cover crops through fall and winter. Cati is a third-generation grower who trained as a sommelier in Barcelona, taking the first flight out of Palma every morning and the last one home every night. When she took over her father's bodega in 2019, she stopped using sulfur in the winery and she has been replacing his Chardonnay and Cabernet with late-ripening, drought-tolerant native grapes that stay fresh in the Mediterranean heat. Cambuix is bottled with no added sulfur, unfiltered and unstabilized. It's for people who like a pink with some personality, and a great way to taste Mallorca when it isn't trying to imitate anywhere else.

More about Cati Ribot

Cati Ribot is rewriting Mallorca's story, one ancient vine at a time. After discovering natural wines in Barcelona, she ditched the family's international-variety playbook and started hunting down forgotten indigenous grapes—Callet, Negrella, and others that nearly vanished. Her wines are gritty, authentic, and wildly different from anything else on the island. A third-generation winemaker choosing the hard path to say something real.

Tasting Notes & Food Pairings

Perfect Pairings

A Mallorcan lunch: grilled sardines, pa amb oli with tomato and sheep's cheese, or paella with rabbit and artichoke. Also good with sobrasada on toast or a plate of fried padrón peppers.

Tasting Profile

Expect a characterful natural pink: wild strawberry, red cherry and a savoury streak of Mediterranean herbs, with the earthy edge and slight haze typical of an unfiltered, no-sulfur bottling. It's typically light to medium-bodied, with fresh, lively acidity and a dry, gently savoury finish. Think of a pale Provence rosé, but more savoury and textured.
