Chardonnay grown on the right bank of the Marne, a stretch of Champagne that most people file under Pinot Meunier and rarely think of for Blanc de Blancs. That is the point of Le Chemin des Plants: a single Chardonnay parcel, farmed certified organic since 2018 and vinified with nothing added. Fabien Caze is the tenth generation of his family to grow grapes on the right bank of the Marne, but the estate as it exists now dates to 2013, when he carved 2.66 hectares out of the family holdings and started bottling on his own after training with Chartogne-Taillet. The juice ferments cold and slowly on native yeasts in 228 to 350 liter barrels, ages years on fine lees, and goes into bottle unfined and unfiltered with a dosage of about 2 g/L, set by blind tasting rather than formula. 2021 was one of Champagne's hardest years, with April frost and relentless mildew, so a grower farming organically and still bottling seven parcel wines is doing something worth paying attention to.

Flatiron's Take

From the Importer

What Polaner Selections has to say about this wine:

Varietal Notes

100% Chardonnay

Vineyard

Vandieres, Right bank Vallee de la Marne

Orientation

Exposure varies

Soil

Sandy clay topsoil, chalk

Viticulture

Parcels are worked without the use of any herbicides or pesticides. Fabien "scratches" or hoes the soils preferring to minimally disrupt the soil structure and plant life. From pruning to harvesting all vineyard work is done by hand and each parcel is harvested separately. Harvesting occurs when the grapes are at optimal ripeness.

Vinification

Aging in barrels of 3 to 6 wines. Malolactic fermentation.

Aging

54 months on yeast.

Tasting Notes & Food Pairings

Perfect Pairings

Oysters on the half shell, sole meuniere, chicken roasted with lemon and thyme, aged Comte, or a plate of jamon.

Tasting Profile

Lemon, green apple and white flowers with a bready, lightly toasty lees note from barrel. Dry and taut, fine mousse, chalky finish.

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
