Les Fourches is the Chardonnay parcel Caze-Thibaut plants his flag on: due-south exposure on a hillside in Vandieres, which ripens the fruit further and gives a Blanc de Blancs with real density and structure rather than just cut. Fabien Caze is the tenth generation of his family to grow grapes on the right bank of the Marne, but the estate as it exists now dates to 2013, when he carved 2.66 hectares out of the family holdings and started bottling on his own after training with Chartogne-Taillet. Everything here is hand-worked, farmed certified organic since 2018 and hoed rather than sprayed; the wine ferments spontaneously and ages in barrels of three to six wines, sits years on fine lees, and is bottled unfined and unfiltered at roughly 2 g/L dosage. 2021 was among the most difficult vintages Champagne has faced in a generation, with frost and mildew slashing the crop, which makes a single-parcel wine from the year a statement of confidence.

Flatiron's Take

From the Importer

What Polaner Selections has to say about this wine:

Varietal Notes

100% Chardonnay

Vineyard

East-facing hillside parcel planted on the Vallée de la Marne's right bank in the village of Vandières. Sandy clay topsoil over limestone.

Orientation

Soil

Chalk

Viticulture

Parcels are worked without the use of any herbicides or pesticides. Fabien “scratches” or hoes the soils preferring to minimally disrupt the soil structure and plant life. From pruning to harvesting all vineyard work is done by hand and each parcel is harvested separately. Harvesting occurs when the grapes are at optimal ripeness.

Vinification

Grapes are picked by hand when fully ripe and are then pressed slowly and gently. All juice is moved by gravity into steel tank. Once each parcel is pressed, the juice is transferred from tank into 50% tank, 50% 228, 350, and 330L barrels for a long, cold, and slow native yeast fermentation. 100% malolactic fermentation, unfined and unfiltered.

Aging

36 months sur lattes.

Tasting Notes & Food Pairings

Perfect Pairings

Lobster with drawn butter, roast turbot, chicken in cream sauce, mushroom risotto, or Comte.

Tasting Profile

Ripe lemon, orchard fruit and hazelnut with a toasty, bready lees character. Dry and broad-shouldered for a Blanc de Blancs, with fine mousse and a long saline finish.

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
