Flatiron's Take

From the Importer

What Polaner Selections has to say about this wine:

Varietal Notes100% Pinot MeunierVineyardSix parcels in Châtillon-sur-Marne and Vandières on the western edge of the Vallée de la Marne.OrientationMultiple parcels, exposure varies.SoilClay-limestone.ViticultureParcels are worked without the use of any herbicides or pesticides. Fabien “scratches” or hoes the soils preferring to minimally disrupt the soil structure and plant life. From pruning to harvesting all vineyard work is done by hand and each parcel is harvested separately. Harvesting occurs when the grapes are at optimal ripeness.VinificationGrapes are picked by hand when fully ripe and are then pressed slowly and gently. All juice is moved by gravity into steel tank. Once each parcel is pressed, the juice is transferred from tank into a combination of 228, 350, and 330L barrels for a long, cold, and slow native yeast fermentation. Tasting Notes & Food Pairings

Perfect Pairings

Charcuterie board, smoked salmon, roasted duck breast, wild mushroom tart, cured meats

Tasting Profile

Structured Pinot-based bubbles with red cherry, raspberry, and bread crust aromas. Minimal dosage creates a dry, complex palate with fine mousse and a linear, mineral-forward finish with brioche notes.

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
