Pinot Meunier on its own, with zero dosage, which is a bolder move than it sounds: Meunier is the grape the large houses use for padding, and almost nobody bottles it alone without sugar to soften the edges. This is Caze-Thibaut's flagship, drawn from six small parcels around Chatillon-sur-Marne on clay-limestone soils with chalk beneath, farmed certified organic since 2018. Fabien Caze is the tenth generation of his family to grow grapes on the right bank of the Marne, but the estate as it exists now dates to 2013, when he carved 2.66 hectares out of the family holdings and started bottling on his own after training with Chartogne-Taillet. Fermentation is long, cold and spontaneous in barrels, the wine spends around two years on fine lees, and it goes into bottle unfined and unfiltered as a Brut Nature. Labeled NV, but the 2023 on the label is the base year, so this is effectively a single-harvest wine.

Orientation

Multiple parcels, exposure varies.

Soil

Viticulture

Parcels are worked without the use of any herbicides or pesticides. Fabien "scratches" or hoes the soils preferring to minimally disrupt the soil structure and plant life. From pruning to harvesting all vineyard work is done by hand and each parcel is harvested separately. Harvesting occurs when the grapes are at optimal ripeness.

Vinification

"Grapes are picked by hand when fully ripe and are then pressed slowly and gently. All juice is moved by gravity into steel tank. Once each parcel is pressed, the juice is transferred from tank into 228, 350, and 330L barrels for a long, cold, and slow native yeast fermentation. 100% malolactic fermentation, unfined and unfiltered "

Aging

30 months sur lattes; The tirage and disgorgement dates are engraved on the bottle.

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
