Made from organically farmed Pinot Noir on the chalky Kimmeridgian slopes of the Aube, Austral is a wine that resists decoration. No dosage. No makeup. Just single-village fruit (mainly from Biaunes), spontaneous fermentations, and aging on lees for clarity, not creaminess.

This NV cuvée (based on 2022) is bone-dry and sharply defined. But it’s not about austerity—it’s about structure. The kind that feels more architectural than aromatic. A Champagne for people who want to taste the vineyard, not the hand. Who prefer texture to toast. Silence to applause.
