Yquem calls its 2005 phenomenal, with a bouquet of unprecedented complexity and aromatic diversity. That's strong language from the estate that sets the standard for Sauternes. The season built it: alternating rain and dry heat concentrated the berries, while moderate water stress and a milder end of summer held on to good acidity, the quality that keeps great Sauternes from being merely sweet. Yquem received the title Premier Cru Supérieur in 1855. Its roughly hundred hectares sit at the top of the Sauternes hills on a mosaic of soils. LVMH bought Yquem in 1999. It's a bottle for a milestone, though it can also make one. Serve it cold, pour small and give it time in the glass.
