Christophe Mignon farms biodynamically in the Vallée de la Marne, focusing exclusively on Pinot Meunier—a grape often seen as a blending partner, but here given the spotlight. “ADN de Meunier” (“DNA of Meunier”) is a cuvée that reflects his meticulous vineyard work and minimalist cellar approach: spontaneous fermentation, minimal sulfur, long lees aging, and bottling with low dosage (Extra Brut).

The Rosé version—based on 2020 and 2021 vintages—is vibrant and savory, with tart red berries, blood orange, rose petal, and subtle spice. A touch of red wine adds color and structure, while the Extra Brut finish (typically 2–3g/L dosage) keeps it focused and saline. It’s vinous and lifted, more about food-pairing versatility than aperitif sweetness.

"The NV Extra Brut Rosé ADN de Meunier is bright and effusive, with explosive energy and tons of precision. The Rosés here were once quite rustic; that is seldom the case these days, as this release makes abundantly clear. Perfumed floral and spice notes open first. Rose petal, cinnamon, blood orange and pomegranate are some of the many nuances that infuse this Rosé with tons of complexity and character. This release is equal parts 2019 and 2018. "Biodynamic farming (although not certified). Low added sulphites. 100% Meunier from Festigny and Le Breuil. 50% 2017, 50% 2018. Bottled 2019. Dosage 4 g/l. As zappy and brisk as their Brut Nature. Rowanberry red and tart and pert and smart. Herbal underlines. Rowanberry tannins. Tiny bit stony at heart but crackling with energy. Those bubbles are small but they bite! You'd want to have food with this."

More about Christophe Mignon

In addition to being a top Champagne vigneron, Christophe Mignon is something of a wizard, a mad scientist.

Mignon is credited — along with a few other notable Champagne vignerons (including Jérôme Prévost) — with elevating the status of Pinot Meunier, once considered a supporting player to Chardonnay or Pinot Noir's leading role. His estate is located in the Vallée de Marne, where Pinot Meunier is grown in clay and chalk soils, ideal for expressing intense fruit and precise minerality.

For the past 20 years, everything at the estate has been done with respect for the lunar calendar, as well as Christophe's unwavering respect for the earth. An inveterate tinkerer, he's designed many of his own vineyard tools, including a homeopathy machine that dispenses minute amounts of copper (as well as tinctures of valerian root and garlic), to curb the need for intrusive chemicals.

He farms over 30 small parcels, and vinifies parcels separately, based on their unique terroir. From a group of vines averaging 45 years of age,
