This is perry made by a legend: Jacques Perritaz, a former Swiss government biologist who chucked the desk job in 2000 to make cider and perry from foraged fruit, building a cult following among cider lovers and wine geeks alike. In 2022 he set up a new base in Normandy's Domfrontais, the spiritual home of poire. Poire Comment is made from late-season perry pears like Plant de Blanc, Fausset, and Cloche, slightly hazy and gently sparkling. A delicious, off-the-radar adventure for anyone who thinks they know what cider can be.
