Jessica Madigan and Sergi Canals run Cisteller in Barcelona's Alt Penedès region, working a rare red-skinned clone of Xarel-lo called Xarel-lo Vermell. This is decidedly not a Burgundy project—it's a deep-rooted exploration of Catalan terroir and a forgotten varietal. The resulting wine is gritty, mineral, and stubbornly local. Sometimes the most interesting wines come from listening to place, not tradition.
