COS is a winery in Vittoria, southeastern Sicily, founded in 1980 by Giambattista Cilia, Cirino Strano, and Giusto Occhipinti (the name derives from their initials). The estate was a pioneer of quality winemaking in this historically overlooked region and helped revive the Cerasuolo di Vittoria DOCG, Sicily's only DOCG, a blend of Nero d'Avola and Frappato. COS farms approximately 50 hectares, certified organic since 2007. Since 2000, they have fermented and aged wines in buried terracotta amphorae (giare), inspired by ancient Georgian qvevri traditions. The Cerasuolo di Vittoria Classico is their benchmark wine: 60% Nero d'Avola and 40% Frappato, co-fermented in amphora, aged further in large oak. A singular expression of Sicilian terroir.

Antonio Galloni

91 points

"Depths of black raspberry mingle with licorice and grilled herbs as the 2022 Cerasuolo di Vittoria Classico opens in the glass. Pleasantly sweet up front, it splashes across the palate with ripe wild berry fruit and a cascade of spice, all propelled by juicy acidity. The finish is crisp and lightly tannic, with a bitter tinge that calls the taster back for more. The 2022 aims to please." —Eric Guido

Robert Parker

92 points

"A blend of 60% Nero d'Avola and 40% Frappato, the organic COS 2022 Cerasuolo di Vittoria Classico sees cement only to achieve a silky, mid-weight texture. Kicked off with a spontaneous fermentation, it reveals fresh aromas of wild strawberry, raspberry, almond, wild herb and crushed stone. The vineyards are characterized by sandy limestone soils that are unique to this part of Sicily." —Monica Larner

More about COS

If you had to pick a single producer responsible for the Sicilian renaissance, it would be COS. They were the first to show the world that Sicily's artisanal side is not just delicious, but worthy of the kind of attention nobody would ever pay to the island's mass-produced Nero d’Avola. They launched a revolution.

COS was founded by three men whose last names start with C, O and S. The "O" — Giusto Occhipinti (uncle of Arianna)— has been the driving force at the domaine, introducing organic and biodynamic techniques and obsessing over the correct vessels for elevage.

Giusto found the perfect farming and winemaking methods to express their unique Vittoria terroir. Soils in this part of Etna have a layer of red clay over a limestone substrate. With the reliable weather you have ideal conditions for producing consistently fresh and balanced wines. It’s no wonder that wine has been produced in this corner of Sicily for almost 3,000 years!
