Brut Nature Champagne means zero sugar added—just wine, bubbles, and whatever minerality the terroir delivers. Cose curates from small grower Champagne producers, and Bouvet represents that philosophy: purist, mineral-forward, with 2023 as a base vintage that was excellent across the region. No dosage means no safety net—what you taste is the wine's actual skeleton: the structure, the place, the decision-making. This is grower Champagne stripped to its essentials.

What Polaner Selections has to say about this wine:

Varietal Notes100% ChardonnayBiodynamicPracticingVineyardFrom a single parcel in the 1er Cru of Bisseil, east of Mareuil. Les Rochforts is the oldest plot of Chardonnay that Antoine Bouvet farms, planted in 1958OrientationWest, North-West facingSoilFrom a very chalky section of Bisseil, in the coeur de terroir.ViticultureFarmed organically by Antoine BouvetVinificationPressed at Antoine Bouvet according to his press cycle using a vertical Coquard basket press. The juice is collected by Champagne Cose without sedimentation and without SO2 and brought back to the winery in Chouilly. The must goes directly into used 225 liter barrel sourced from Jaques Selosse, which are between 2nd and 5th use, from a mix of French coopers. Fermentation is natural, but a pied de cuve may be added to encourage the wine to finish completly dry. Malolactic happens naturally, but not to every barrel each year and SO2 is added to the barrels only if absolutly necessary. Elevage lasts until late July or Early August when the wines are bottled with a prise de mousse under cork. After 18-24 months sur latte, the bottles are disgorged.Aging18-24 months surlattes; zero dosage; Disgorged July 31, 2025; released November 2025

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
