Domaine Nowack has made wine in the Vallée de la Marne since 1795—eight generations of tradition distilled into a small estate. Flavien Nowack's approach is methodical: single-parcel vinifications, no chaptalisation, no malolactic fermentation, indigenous yeasts. What sets this wine apart is the use of unfermented grape must for the secondary fermentation, creating lower bottle pressure and a silky mouthfeel without heaviness. Seventy-five percent Pinot Meunier with Chardonnay and Pinot Noir. "Les Terres Bleues" references the distinctive blue-toned soils. Extra Brut dosage (under 6g/L) provides subtle balance.

Malolactic happens naturally, but not to every barrel each year and SO2 is added to the barrels only if absolutly necessary. Elevage lasts until late July or Early August when the wines are bottled with a prise de mousse under cork.
