“Roc Solare” is a standout cuvée from Dhondt-Grellet, a rising star in the grower Champagne scene. Made primarily from Chardonnay (often with a touch of Pinot Noir), this Extra Brut bottling is drawn from Premier Cru sites on chalk soils and fermented with native yeasts in neutral oak barrels, with extended lees aging and no malolactic fermentation.

The result is a Champagne that’s tightly wound, stony, and full of quiet energy. Expect notes of lemon peel, green apple, crushed shell, and toasted almond, with ultra-fine bubbles and a long, saline finish. The low dosage lets the terroir take center stage, and while it’s drinking beautifully now, it has the structure to age gracefully.

Serve with oysters, sushi, or anything that benefits from a clean, mineral backbone. A Champagne for the cellar or the serious table.
