Julien Mareschal's Jura project is uncompromising: organic and biodynamic, wild yeast fermentation in large oak and foudres, zero filtering, zero fining, zero added SO2. The 'Terre Du Lias' (Jurassic limestone formation) is 100% Chardonnay from 45-55 year-old vines on Lias marl soils. Aged on lees for a full year with complete malolactic fermentation, it carries the oxidative character that defines serious Jura whites: sometimes wild, always honest, never apologizing. This is wine as geology made liquid.

More about Domaine de la Borde

Julien Mareschal had no family background in wine when he set up Domaine de la Borde in 2003, in the marly valleys around Pupillin in the Jura. He farms five hectares, organically and biodynamically since 2012, planted to the local cast: Ploussard, Trousseau, Pinot Noir, Chardonnay and Savagnin. Natural wine lovers know this place well. Low-intervention wines with a real sense of Pupillin's unique terroir.
