Dominique Lafon has Burgundy in his blood — his great-grandfather was Mayor of Meursault in the 1920s, and he has run Domaine des Comtes Lafon since the 1980s with the methodical devotion of someone who knows exactly what they are custodian of. The 2000 Volnay is a mature library wine, now at full development: a warm vintage that produced wines of early accessibility but surprising longevity in the hands of a great producer. What you find in the glass today is Volnay at its most evolved and complete — all secondary depth, no waiting required. This is a bottle for a very special occasion, or for a quiet Tuesday when the occasion doesn't matter.

"Medium red. Spicy aromas of plum and cherry. Spicy and supple, with a plump middle. The softness here comes from the element of dilution from the huge rainstorm shortly before the harvest, says Lafon. But this is yummy already, and appears to have the balance to provide fun drinking for at least four or five years. Finishes with light tannins and decent length." —Stephen Tanzer
