Eleni and Edouard Vocoret's first steps into Chablis Grand Cru, from a 0.28-hectare sliver of Valmur planted in 1991 that came to them in 2023 from the wider Vocoret family estate. The couple had deliberately kept their own domaine tiny, but the 2023 family transfer brought it to roughly ten hectares; they still bottle each site on its own because they believe you can only make great wine if you know every plot. Eleni's training with Vincent Dauvissat shows in the cellar: hand harvesting, natural yeasts, fermentation in stainless, then elevage in barrel with very little new wood. 2023 was warm and sunny in Chablis and generous almost everywhere, so it was the growers who held yields down -- as organic farming tends to do -- who made the concentrated wines. Valmur sits in the middle of the grand cru hillside between Vaudesir and Les Clos, and runs to the broader, deeper end of the Chablis grand crus. Eleni once told us her wines need time to show themselves, and she was right: give this a few hours in a decanter, or a decade in the cellar.

It has a lovely reduction on the nose, real intensity, hints of yellow fruit, crushed limestone and light floral scents. The palate is very harmonious, silky smooth counterbalanced by a fine bead of acidity. Lemon curd, almond, and a touch of praline develop toward the finish. "From a 0.28-hectare site planted in 1991, facing southeast and on the side that sees the morning sun, Eleni & Edouard Vocoret’s 2023 Chablis Grand Cru Valmur has turned out very well. Wafting from the glass with a deep bouquet of iodine, Meyer lemon, pealed almonds and oyster shell, framed by a touch of youthful reduction, it’s full-bodied, concentrated and layered, cool and tangy, concluding with a long, mineral finish.
