Cinsault gets the spotlight in this rare varietal bottling from Dominique Hauvette — made from young Cinsault vines that Dominique has dedicated herself to in recent years. Working biodynamically at the foot of the Alpilles, Hauvette ferments spontaneously and ages in ovoid concrete tanks to keep the variety's perfume and lift intact. The 2024 is luminous: pale garnet, lifted aromas of cherry and raspberry threaded with thyme and wild lavender, and a saline freshness on the finish that's pure Provence garrigue. Supple, juicy, mineral — a Mediterranean red built for a slight chill and joyful drinking.
