Antoine and Marie founded Domaine Les Volets in December 2022—their first harvest was 2023. They chose Fleurie, known as the Queen of Beaujolais for its elegant, fragrant Gamay. Their 4.11 hectares spread across eight parcels, some containing vines over 100 years old, growing on Fleurie's characteristic decomposed pink granite. The couple farms organically with biodynamic conversion underway, using no sulfites and fermenting in concrete, stainless steel, and concrete egg-shaped vats. Pepette is fresh, fruity wine: red berries, violet, dried grass, with a floral and subtly saline finish. At 12% alcohol and classified as Vin de France, it's unencumbered by appellation rules. A young estate bringing natural winemaking philosophy to heritage old vines.
