If you've been curious about Cédric Mottet's tiny Jura domaine, this is the natural way in: younger-vine Chardonnay from his newest vineyard, given the same patient, hands-off treatment as his rarer bottlings. La Pierre is a 1.2-hectare plot in Buvilly, near Pupillin. It faces northwest, on iridescent marl over limestone bedrock. Mottet bought it in late 2021 as the last piece of his 6.5 hectares, and he has no plans to grow any further. The plot gives two Chardonnays, named (a little nerdily) for the axes of a graph. Les Abscisses comes from 50-year-old vines, and this one, Les Ordonnées, comes from vines averaging 25. Mottet was a professional jazz musician before he came home to Arbois in 2016, which is where the domaine's name comes from. He learned the trade at Domaine du Pélican and Domaine de la Renardière, among others, and took up Stéphane Tissot's parcel-by-parcel thinking along the way. The 2023 Côtes du Jura was farmed organically, picked by hand and fermented on native yeasts. It then spent 24 months in three-year-old French oak barrels without lees stirring, and went into bottle unfined, unfiltered and with very little sulfur.

Tasting Notes & Food Pairings

Perfect Pairings

Comté gougères or a wedge of aged Comté; roast chicken with morels and cream; trout meunière with brown butter; mushroom and Gruyère tart; pork tenderloin with a mustard cream sauce.

Tasting Profile

Expect the taut, mineral side of Jura Chardonnay: lemon, green apple and white pear with a stony, slightly saline edge, plus a gentle hazelnut note from long ageing in older oak. Typically medium-bodied with bright, cutting acidity, finishing dry and long. Think a leaner, more savoury white Burgundy.
