"The 2021 Bonnes Blanches is an intense, powerful style. There's winemaking influence here in the flavors: fermented two-thirds in 2,000L foudre and one-third in 400 and 500L barrels. The slow, natural ferment took longer than a human gestation before spending a year on its lees, adding rich padding to the wine's firm structure and a subtle pastry note joining the citrus, apple fruit and floral characters.
